My family is originally from Tamil Nadu, so we sourced some very special cacao beans from this area. We craft this 58.5% chocolate in house, and combine it with coconut and a hint of cardamom, which are both indigenous to the area. Jaggery (an unrefined sugar made in India by the evaporation of the sap of palm trees) gives this bar a rich, brown sugar flavour that’s a cross between spicy molasses and buttery caramel, for a true taste of place.
